Sweet Potato Idea

For snack today, I baked a sweet potato in the oven and then sprinkled a little cinnamon on top, thinking my 2 1/2 year old daughter would love it. Then, as usual, when I think I know what my daughter will eat, she refuses. Absolutely holds her ground with her hands over her mouth, refuses!  I know there are so many wonderful nutrients in sweet potatoes. 

"A 7-ounce (1 cup) serving of sweet potatoes contains 65% of the minimum necessary daily amount of Vitamin C. Sweet potatoes are also high in calcium, folate, potassium and beta-carotene. Beta-carotene is an antioxidant which converts to Vitamin A in the body: one serving of sweet potatoes can provide you with as much as 700% of the US RDA for Vitamin A. The Center for Science in the Public Interest rates sweet potatoes as the number one most nutritious vegetable because they such are so nutritionally rich."

Now it is my mission to figure out a way to get her to eat sweet potatoes. Maybe it is the texture, or the fact that it is orange (which doesn't make sense since she likes carrots), or maybe it was just her mood today.  Either way, I'm interested to see if I make sweet potatoes in a different way, she will eat it willingly.  I will search out 3 sweet potato recipes, try them out on my toddler, and let you know how it turns out.  I will also post all 3 recipes for those interested in trying them out for yourself.

Starting a Nonprofit

I'm reading a book titled Starting & Building a Nonprofit: A Practical Guide b Peri H. Pakroo, J.D., in order to identify the steps I need to follow to help me explore my future career vision to help families lead healthier lives.  Below will be my notes from this book:
